Made using traditional methods with mother yeast and fresh egg yolks, the dough undergoes a slow 48-hour leavening process followed by six hours of natural upside-down cooling, helping create its characteristically light and fluffy texture. The buttery, fruit-filled crumb combines the sweetness of raisins with fragrant candied orange for the unmistakable flavour of traditional panettone.
